now THAT's a pie chart that makes sense to me.

specially now...  a couple of days ago, inspired by the pie thread I had a 'pie night' here at home, friends brought pies so we had:

- four cheese and calabrese sausage pie
- beef pie
- heart of palm pie
- green apple pie
- peach + custard pie
- walnut cake

with italian red and sparkling white wine.

lucky me...  It was my house, so I kept all the leftover pies...

I'm pretty sure I had leftover pie every Thursday for lunch went I went to school in Action in London in the late 60s.

For the dough, use your favorite savory pie dough recipe; the filling uses milk so for strict vegetarians this may put this pie off-limits.

The filling:

- Hearts of palm, 1 large can/jar (800 grams gross) diced;
- 1 to 2 soup spoons of the preserve water from the above can;
- 1 spoon cooking oil
- 3 crushed garlic cloves
- 1 diced onion
- optional 100 gr green peas
- optional 100 gr sweet corn
- optional 50gr diced black olives
- optional 2 diced tomatoes
- if you don't use the optionals above, fill in with more heart of palm
- parsley to taste
- salt to taste
- 1 cup milk
- 2 spoons wheat flour
heat oil in cooking pot
cook garlic and onion until golden
add hearts of palm and one spoon of the preserve water
add optional ingredients
cook until tomato is soft, if not using tomato until heart of palm is softened
mix well the milk and flour in a cup
add mix to pot with the rest
if too thick add a little milk
stir, stir...
turn heat off and reserve while you prepare the dough
fill the pie with the mix
cover the pie with more dough
cook in medium oven for 50 minutes or until golden.


repeat until satisfied.
